When it comes to Christmas baking… I’m a bit of a maniac. I love to bake for people and every year my to-do list seems to get longer. In a season where things are suppose to be calm and bright, it’s very easy to find yourself stressed and tired. I’ve noticed that no matter how many different things I’ll whip up, there is always the unanimous favourite amongst my friends and family. It just so happens to be the easiest and quickest holiday recipe of mine as well. Tiger butter!
4 cups white chocolate (Callebaut chocolate preferred)
1 cup creamy peanut butter
1/2 cup dark chocolate
Place white chocolate in double boiler. Slowly melt the chocolate down until smooth with no lumps. Add the peanut butter and mix in until even consistency. Prepare a baking sheet lined with wax paper. Pour chocolate and peanut butter mixture onto baking sheet, smoothing out until even across entire sheet. Melt the dark chocolate and drizzle over baking sheet in parallel lines spaced roughly an inch apart. Take a small spoon and drag it through the lines, and again in the opposite direction. Place baking sheet in the fridge for about 15 minutes. Take a knife and score the tiger butter to make cutting pieces easier once it has hardened. After about an hour, the tiger butter is ready to cut and serve!
