Cinco de Mayo is celebrated this Monday and a big part of this annual celebration is the food! I asked our Inventory Manager Kata, who has shared her amazing recipes with us in the past, for something in honour of this holiday. Here’s one of her favourite Mexican recipes – the classic Huevos Rancheros (recipe adapted from the cookbook A Treasury of Mexican Cuisine).
I. 1/4 cup oil / 6 tortilla
II. 12 eggs / 1/2 cup oil
III. Salsa Ranchera (recipe to follow)
I. Fry the tortillas lightly in oil, and remove while still soft. Put a tortilla on each plate.
II. Fry the eggs in oil two at a time. Put 2 eggs on top of each tortilla,
III. Cover the eggs with salsa ranchera, and serve immediately.
Salsa Ranchera recipe:
- 2 large tomatoes
- 3 chiles
- 1/2 onion, finelt chopped
- 1 clove garlic
- salt to taste
- 1 tablespoon oil
Parboil the tomatoes and chiles. Peel the tomatoes. Grind the tomatoes and chiles in a mortar with the onion and garlic. When they are evenly ground, add salt. Heat the oil in a frying pan, and fry the ground mixture until it is well cooked. Serve with fresh avocado and beans if so desired.
